Ingredients

For the Baked Salmon:

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 2 cloves black garlic, minced
  • 4 lime leaves, thinly sliced
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon Celtic salt

 

For the Light Tzatziki-Zucchini Salad:

  • 1 cup Greek yogurt
  • 1 medium zucchini, grated
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Greek Salad

Ingredients

Salad:

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper (yellow or red), thinly sliced
  • 1 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup caper leaves (a unique Mediterranean ingredient)
  • 1/2 cup purslane leaves (a unique Mediterranean ingredient)
  • Fresh oregano leaves for garnish

 

Dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and freshly cracked black pepper to taste
