Ingredients:

For the Tofu:

  • 1 block firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil

For the Sauce:

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Stir-Fry:

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small onion, chopped
  • 1 cup pineapple chunks (fresh or canned)
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil

Instructions:

  1. Prepare the Tofu:

    • Press the tofu to remove excess moisture. Cut it into bite-sized cubes.
    • Toss the tofu cubes in cornstarch until evenly coated.
    • Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the tofu and cook until all sides are golden brown and crispy. Remove from the skillet and set aside.

  2. Make the Sauce:

    • In a small bowl, whisk together the rice vinegar, soy sauce, ketchup, brown sugar, pineapple juice, and sesame oil.
    • In a separate small bowl, mix the cornstarch and water to create a slurry. Set aside.

  3. Stir-Fry the Vegetables:

    • In the same skillet, add 1 tablespoon of vegetable oil.
    • Add the chopped bell peppers, onion, and garlic. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.
    • Add the pineapple chunks and stir-fry for an additional 2 minutes.

  4. Combine and Serve:

    • Return the tofu to the skillet with the vegetables.
    • Pour the sauce over the tofu and vegetables. Stir to coat everything evenly.
    • Add the cornstarch slurry to the skillet and stir until the sauce thickens and becomes glossy.
    • Serve hot over a bed of steamed rice or noodles, garnished with sesame seeds and chopped green onions if desired.
